African Sweet Potato & Peanut Soup

Ingredients

  • 1 onion
  • 1 jalapeno
  • 2 cloves garlic
  • 3 large sweet potatoes, peeled and cubed in small pieces
  • 1 14-ounce can fire roasted tomatoes
  • 1 14-ounce can light coconut milk
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon curry and/or turmeric
  • 1/4 teaspoon smoked paprika
  • 1 tbsp lemon juice
  • 1/2 cup (or more!) peanut butter (optional: chopped peanuts)
  • 1-2 cups kale, stems removed, chopped

Instructions

  • Cook onion, jalapeno, garlic in olive oil until almost caramelized
  • Add sweet potatoes and brown for a few minutes
  • Add spices and cook for 1-2 minutes to activate
  • Add tomatoes, coconut milk
  • Simmer until potatoes tender
  • Add peanut butter and kale, simmer until thick.
  • Add cilantro if available.
