Huevos Rancheros

  • Bottom level:
    • Refried beans
  • Sauce:
    • Roast roughly chopped bell pepper in olive oil
    • Add white part of scallions near the end
    • Add chorizo, cubed, cook for a while
    • Add chopped tomatoes, and/or a bit of “basil” or “bland” spaghetti sauce or salsa if available
  • Fried eggs on top
  • Cold toppings:
    • Green part of scallions
    • Crumbled feta or similar cheese
    • Cubed avocado
  • Serve with tortilla chips
