Apple-Oat Breakfast Squares

Ingredients

  • 5 cups oats (divided: 4 + 1)
  • 1 tbsp ground cinnamon
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup maple syrup
  • 1 medium apple, cut into small chunks

Instructions

  • Preheat oven to 350°F
  • Prepare a 9×13-inch baking pan parchment paper
  • Blend 1 cup of oats into a fine powder
  • Mix dry and wet ingredients (except apple pieces), then combine
  • Spread mixture on pan and push apple pieces in the mixture
  • Bake until golden-brown and a toothpick inserted in the center comes out clean, about 20 to 30 minutes
  • Let cool and cut.
