Beet & Feta Kale Salad

Ingredients

  • Pomegranate seeds
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • Olive oil
  • 2 or 3 beets
  • Cumin
  • Kale
  • Feta cheese
  • Walnuts/almonds/cashews

Instructions

  • Cut beets in small pieces. Add generous amount of cumin, paprika, salt and pepper, and olive oil. Cook at 350 for about 30-40 minutes.
  • Roast chopped nuts
  • Combine olive oil, lemon juice, dijon mustard for the dressing
  • Wash kale and massage thoroughly
  • Let beets and nuts mostly cool
  • Combine: kale, nuts, dressing, feta, pomegranate seeds, and beets
