Cashew Alfredo Sauce

Makes about 4 cups of sauce

Ingredients

  • 2 cups cashews
  • 1 ½ c. water
  • 2 small or medium onions, sliced or diced
  • 6 tablespoons nutritional yeast
  • Spices to taste: rosemary, thyme, paprika, cayenne, salt, pepper
  • 1 teaspoon lemon juice
  • fresh parsley, chopped (optional)

Instructions

  • Boil cashews in about 2 cups of water for about 10 minutes.
  • Pour cashew water in measuring dish; keep 1 ½ cups (more if sauce should be thinner)
  • Caramelize onions in olive oil; deglaze with wine; add spices at the end
  • Combine onions, cashews, water, lemon juice, and nutritional yeast, blend until smooth
  • Garnish with fresh parsley (if using)
